Choosing the menu for your vegetarian wedding is not an easy task, even if, it must be admitted, some aspects are rather pleasant, especially when it comes to tasting. But if you are vegetarian and you want to offer your guests a meal following your convictions on the big day, then you will have to be twice as creative. 1 – Vegetarian Zucchini and Cheese Croques

– 1 grainy bread

– 1 zucchini

– 30 grams of garlic and herb cheese

– 30 grams of arugula

– Olive oil

Preparation:

– Slice the bread

– Cut the zucchini into thin strips

– Put a little oil in your pan

– Fry the zucchini over low heat

– Sprinkle them with chili pepper

– Spread your bread slices with garlic and herb cheese

– Place the zucchini on top of the cheese

– Add parmesan cheese on top

– Cover with arugula

– Add a second slice of bread

– Do the same as above

– And then put your zucchini croques in the oven for 7 minutes at 180 degrees

2- Arugula and Parmesan Muffins

At your wedding, you can opt for these muffins topped with arugula leaves and grated parmesan to serve as an appetizer. These are simple to prepare.

Also, the preparation and cooking times do not exceed 50 minutes. For six people, for example, you will need 12 muffins with 175 g of flour followed by 50 g of arugula. Then you will need three tablespoons of baking powder, two eggs, salt, and pepper. Finally, you will add 50 g of grated parmesan.

The preparation itself

To have your appetizer with arugula and parmesan muffins, you will first heat your oven to 200 ° C. Then, you will spread butter and flour medium on your muffins. As for the arugula, you will chop it wildly using your knife.

After that, you’re going to have two bowls. One will be used to gather the flour, your yeast, your arugula, and also the parmesan cheese. In the other bowl, you will put olive oil and milk. In this same bowl, you will beat your eggs. Then comes the stage of the different seasonings. Both will be done separately once the preparation is finished, you will mix them thoroughly.

Then, you will put the dough in adapted molds by leaving a space of a quarter towards the top. This way, after baking, the muffins will fill the space as they arise. You will need 25 minutes maximum for this, and as soon as it is ready, you will let the muffins cool down and remove them from their molds. This recipe will also please your guests.

3- The Buddha bowl

For a Vega recipe at your wedding, you can choose the Buddha bowl by accompanying it with bulgur, chickpeas. In addition, you can add roasted vegetables. To present this dish to your guests, you will need 400g cauliflower, 200g cooked chickpeas. Then you will look for half a pumpkin, a yellow onion, and four cloves of garlic.

In addition, you will need cayenne pepper, sumac, cumin, parsley, olive oil. To this, you will add 70g of spinach, 15g of sunflower seeds, and 250g of bulgur. You will also need lemon, mustard, and maple syrup.

How to prepare it?

To begin the preparation, you will heat your oven to 200°C. Then, you will lay out in a salad bowl, the onion, the pumpkin, the chickpeas. In the same way, you will put in the aforementioned bowl your garlic, the cauliflower. It should be noted that the pumpkin will be put in pieces when the garlic is left as it is and the onion minced.

To this mixture, you will add olive oil and spices. To finish this first part, you will let the mixture cook for 20 minutes. At the time of this cooking, the bulgur will also be cooking. After the vegetables are cooked, you will proceed to peel the garlic cloves. Once this is done, you will keep a part in a bowl that will be crushed. This content will be mixed with olive oil, lemon juice, mustard, and maple syrup. To serve, combine the spinach with the bulgur and the roasted vegetables.

The whole thing will be drizzled with a mixture of lemon juice, mustard, and maple syrup. Top with your sunflower seeds and parsley. Your guests will also appreciate this vegetarian recipe with mint.

4- Vegetarian chili with tofu

It will be a pure delight to have on the menu of your wedding, the vegetarian chili with tofu. The ingredients you can use to prepare this delicious dish are:

– 200 g of onion

– 0,2 g of dried red chilies;

– 2 cloves of garlic;

– 70 g celery;

– 100 g of carrots;

– 80 g of green peppers ;

– 12 g brown sugar;

– 260 g regular firm tofu ;

– 380 g canned tomatoes;

– 3 g cumin powder;

– 45 mL canola oil;

– 400 g red kidney beans;

– salt and pepper.

The preparation will start by chopping the onion, garlic, and red pepper. Now, you will heat your oil medium by putting the onion and garlic in it. Here you will be careful that these two ingredients are not burned.

Now you will dice the celery, bell pepper, and carrots. These will then be added to the mixture on the fire. After a short time, you will put in the mixture, the brown sugar, cumin, and red pepper. The whole thing will remain on the fire for 60 seconds before the tofu, diced into small pieces, is added to the mixture.

Now it’s time to add your beans. Before putting them in the mixture, you will rinse and drain them. Then pour in the tomatoes. You also need to add enough water to have a good mixture. Stir well and let it cook for 10 minutes. This recipe comes in several varieties and you can season yours and garnish it with coriander.  

5- Pizza on pita

This dish will preserve your health because of the antioxidants it contains. It will also provide your body with calcium. To prepare it, you will need grilled red bell pepper in strips, two tablespoons of grated Gruyere cheese, and 5 tablespoons of tomato sauce for pizza.

On top of that, you’ll need a quarter teaspoon of fennel seeds, two wheat pitas, two pinches of salt, and a pinch of pepper. To all this, you will add a quarter cup of grated light mozzarella and half a small red onion. The onion should be cut into thin slices.

Preparation of the Pizza on pita

This preparation will start with the heating of the oven grill. When it is done, you will mix in a bowl the fennel grains and the red bell pepper. Another bowl will contain a mixture of grated Gruyere and mozzarella.

Next, the pita bread will be divided into two and placed on a tray. We will put them in the oven so that the edges are well browned. After that, you will apply the tomato sauce on the parts of the pitas that you will cover with peppers. Then you will sprinkle the whole with grated cheese. The onions will be cut into thin slices to garnish the mixture. After two minutes under the grill, you can serve the Pizza on pita.

6- Vegetarian recipe for Pear and Arugula Ice Cream

  • Serves 6

The ingredients

– 70 gr of Regilait semi-skimmed

– 1kg of Rochas pears

– 100 g of arugula

– 550 ml of water

– 120 g banana (1 piece)

– 6 teaspoons of sesame oil 20 gr of toasted sesame

– 70 g of semi-dry chavicol cheese Salt and pepper

Preparation:

For the velouté

Peel the pears, then roughly chop them in a blender.

Add the washed and drained arugula, the water, the regilait, and the cut banana.

Blend on high speed for 1 to 2 minutes, season with salt and pepper.

Add 4 teaspoons of sesame oil, blend again, and check the seasoning and texture.

Keep in a cool place before serving.

For the goat cheese rocher

Cut the crottin de chavignol into pieces of about 10 grams, then shape them into a ball. Moisten them one by one under a trickle of water, then roll them in the toasted sesame seeds (the sesame seeds stick better to the moist cheese)

Arrange the velouté glacé in a shallow dish or soup plate, add the goat cheese rock in the center, decorate with a drizzle of sesame oil and a small redchard leaf.
