Ingredients for the Cauliflower

  • 1 medium head cauliflower (about 4 cups large florets)
  • ¾ cup all-purpose flour or gluten-free flour (if desired)

  • ½ teaspoon sea salt
  • ½ teaspoon black pepper

  • 1 - 2 cups Panko breadcrumbs (gluten-free if necessary)

  • 1 cup Thai Sweet Chili Sauce
  • 1 cup vegan mayo, homemade or store-bought
  • 1-2 teaspoons sriracha (optional, to taste)
  • 2 tablespoons nutritional yeast (optional)
  • ¼ teaspoon sea salt (optional)

  • Green onions
  • Sesame seeds

Directions

1. Preheat Oven & Prepare Cauliflower

Preheat the oven to 425°F (218°C). You can also use an air fryer, but baking may yield better results.

2. Coat the Cauliflower

  • If not battering the cauliflower: Mix olive oil, 2 tablespoons of sweet chili sauce, salt, pepper, and optional garlic powder. Pour over cauliflower florets and toss. Lay the florets on a lined baking tray.
  • If battering the cauliflower: Mix flour and spices in a bowl, then whisk in non-dairy milk to create a thick batter. Coat each cauliflower floret in the batter, then dip into Panko breadcrumbs.

3. Bake or Air Fry

  • Baking: Place cauliflower on a tray and bake for 30-40 minutes, flipping halfway through.
  • Air Frying: Place cauliflower in a single layer in the air fryer basket and cook at 400°F (205°C) for 15-25 minutes, shaking halfway through.

4. Make the Bang Bang Sauce

Mix vegan mayo, sweet chili sauce, sriracha, nutritional yeast, and sea salt in a bowl. Stir well to combine.

5. Toss Cauliflower in Sauce

Once the cauliflower is crispy and golden, toss it in the prepared Bang Bang sauce until evenly coated.
