There's something magical about pulling a tray of perfectly soft sugar cookies from the oven, especially when they're destined to become Valentine's Day treats. These Soft Valentine's Day Frosted Sugar Cookies have been my go-to recipe for years not just because they taste incredible, but because they're practically foolproof. No chilling the dough for hours, no fancy equipment needed, just simple ingredients that come together into the softest, most tender cookies you'll ever bite into.
I started making these cookies when my daughter asked if we could make "the pink ones from the bakery" at home. Turns out, homemade is so much better (and a lot cheaper). Now they're a tradition every February, and I'm betting they'll become one in your kitchen too.

Why You'll Love These Soft Valentine's Day Frosted Sugar Cookies
Let me tell you what makes these cookies special. First, they stay soft for days no rock-hard disappointments here. The secret is using just egg white instead of a whole egg, which keeps them tender without making them cakey. Second, the frosting is buttery and smooth, not that overly sweet grocery store kind. And third, they're actually fun to make. No stress, no fuss, just good old-fashioned baking.
These cookies are perfect for class parties, Valentine's Day gift boxes, or just because you want something sweet on a Tuesday. They're also great for getting kids involved my kitchen always looks like a pink sprinkle bomb went off, but those are the best kinds of memories.

What You'll Need for These Valentine's Day Sugar Cookies
Cookie Ingredients
The cookie base is beautifully simple. You'll need softened butter (salted or unsalted works), granulated sugar, a bit of brown sugar for extra softness, one egg white, vanilla extract, all-purpose flour, baking soda, baking powder, and salt. That's it. No cream of tartar, no almond extract, no weird ingredients you'll use once and never again.
Frosting Ingredients
For the frosting, grab more softened butter, powdered sugar, a tablespoon of cream (or milk), vanilla extract, pink gel food coloring, and Valentine's Day sprinkles. The cream makes the frosting extra silky without making it too thin.
How to Make Soft Valentine's Day Frosted Sugar Cookies
Making the Cookie Dough
Start by preheating your oven to 350°F and lining a baking sheet with parchment paper. In your stand mixer with the paddle attachment, cream together the butter, granulated sugar, and brown sugar until it's light and fluffy this usually takes about 2 minutes. Don't rush this step; it's what makes your cookies tender.
Add the egg white and vanilla, mixing for another 30 seconds until everything is well combined. Then add your flour, baking soda, baking powder, and salt. Mix just until the flour disappears. Overmixing is the enemy of soft cookies, so stop as soon as you don't see dry flour anymore.
Using a small cookie scoop, portion out equal-sized balls onto your prepared baking sheet. I like using a scoop because it makes the cookies uniform, which means they bake evenly and look professional. Bake for 8 minutes yes, just 8 minutes. They'll look slightly underdone, and that's exactly what you want. Let them rest on the baking sheet for 5 to 10 minutes before transferring to a cooling rack.

Whipping Up the Frosting
While your cookies cool, make the frosting. Beat the softened butter in a bowl until it's light and fluffy. Add the powdered sugar, vanilla extract, and cream, then whip until you get a smooth, fluffy frosting. Add a few drops of pink gel food coloring and mix again. Gel coloring works better than liquid because it won't thin out your frosting.
Once your cookies are completely cool (this is important warm cookies will make your frosting melt), spread or pipe the frosting on top. Immediately add your Valentine's Day sprinkles before the frosting sets. The sprinkles stick best when the frosting is fresh.

Tips for Perfect Sugar Cookies Every Time
Don't skip the parchment paper it prevents sticking and makes cleanup a breeze. If your cookies spread too much, your butter might have been too soft or your dough too warm. Room temperature butter should hold a fingerprint but not feel greasy. If your cookies are too puffy, you might be overmixing the dough or using too much flour. Always spoon and level your flour rather than scooping directly from the bag.
Want a different flavor? These cookies are incredibly versatile. You could make them for other holidays by changing the sprinkle colors, or add a teaspoon of almond extract to the dough for a subtle twist. Just like my easy chocolate covered strawberry brownies, these cookies are a blank canvas for creativity.
