Why You'll Love This One Pot Lemon Herb Chicken & Rice

Let me count the ways:

It's ridiculously simple. You brown the chicken, throw in the rice and broth, and let it all simmer. That's it. No complicated techniques or fancy ingredients required.

Cleanup is a breeze. One pan means one thing to wash. On busy nights, that's worth its weight in gold.

The flavors are bright and comforting. Lemon and Italian herbs bring a fresh, Mediterranean vibe that feels both light and satisfying. It's like sunshine on a plate.

It's budget-friendly. Chicken breasts, rice, and a few pantry staples this meal won't break the bank but tastes like you put in way more effort than you did.

Everyone actually eats it. Picky eaters? This dish usually wins them over. The mild flavors work for kids while still being interesting enough for grown-ups.

What You'll Need

For the Chicken

  • 4 boneless skinless chicken breasts – the star of the show
  • 2 tablespoons butter – for that rich, golden sear
  • Salt and pepper to taste – never skip proper seasoning
  • 2 teaspoons Italian seasoning – a blend that does all the work for you

For the Rice

  • 1 cup uncooked white rice – long-grain works beautifully
  • 2¼ cups chicken broth – low-sodium gives you control over saltiness
  • Juice of 1 lemon – fresh is best, but bottled works in a pinch
  • 1 teaspoon Italian seasoning – doubling down on those herbs

Optional Garnishes

  • Fresh parsley or cilantro
  • Lemon wedges for squeezing

How to Make One Pot Lemon Herb Chicken & Rice

Step 1: Brown the Chicken

Heat your large skillet over medium heat and melt the butter. While it's warming, season both sides of the chicken breasts generously with salt, pepper, and Italian seasoning. Don't be shy this is where the flavor starts.

Once the butter is melted and slightly foamy, add the chicken. Let it brown for 1-2 minutes per side. You're not cooking it through at this point; you're just creating a golden crust that'll add depth to the final dish. Transfer the chicken to a plate and set aside.

Step 2: Add the Rice Mixture

Here's where it gets even easier. Without cleaning the pan (those browned bits are flavor gold), add the uncooked rice, chicken broth, lemon juice, and remaining teaspoon of Italian seasoning. Give everything a good stir to combine and scrape up any tasty bits stuck to the bottom.

Step 3: Simmer Until Done

Place the chicken breasts right on top of the rice mixture. Cover the pan with a lid, reduce the heat to medium-low, and let it simmer for 20-25 minutes. You'll know it's ready when the liquid has been absorbed and the rice is tender.

Resist the urge to lift the lid too often steam is your friend here, and letting it escape can affect cooking time.

Step 4: Serve and Enjoy

Once everything's cooked, garnish with fresh herbs and serve with lemon wedges on the side. A little extra squeeze of lemon brightens things up beautifully.

Tips for the Best Results

Use a pan with a tight-fitting lid. This keeps all that steam where it belongs and ensures even cooking.

Don't skip the browning step. Those couple minutes give you so much flavor. If you're tempted to skip it, don't. Trust me on this one.

Check your rice timing. Different types of rice have different cooking times. If you're using brown rice, you'll need to adjust the liquid and cooking time accordingly.

Let it rest for a few minutes. After you turn off the heat, let the pan sit covered for about 5 minutes. The rice will finish absorbing any remaining moisture and fluff up perfectly.

Add vegetables if you like. While the classic version is just chicken and rice, you can absolutely throw in some peas, spinach, or green beans during the last few minutes of cooking for a healthy chicken and vegetable skillet vibe.

Variations to Try

Creamy Lemon Chicken and Rice

Stir in ½ cup of heavy cream or Greek yogurt right before serving for a richer, creamy lemon chicken and rice experience.

Lemon Chicken with Rice and Vegetables

Add diced bell peppers, zucchini, or cherry tomatoes to the rice mixture before simmering. You'll end up with a complete meal that's even more colorful and nutritious.

One Pot Lemon Chicken and Potatoes

Swap the rice for baby potatoes cut into quarters. You'll need to increase the cooking time slightly, but the result is equally delicious and hearty.

Oven Baked Lemon Chicken and Rice

If you prefer using your oven, transfer everything to a baking dish after browning the chicken, cover tightly with foil, and bake at 375°F for about 30-35 minutes.

What to Serve With It

This dish is pretty complete on its own, but if you want to round out the meal:

  • A simple Asian cucumber salad adds crunch and freshness
  • Honey roasted carrots bring a touch of sweetness
  • Crispy zucchini chips make a fun side for kids
  • A light watermelon feta salad is perfect for summer dinners

Storing and Reheating

Store leftovers in an airtight container in the fridge for up to 3 days. The rice will absorb more liquid as it sits, so you might want to add a splash of broth when reheating.

To reheat, microwave on medium power, stirring occasionally, or warm gently in a covered skillet over low heat. If the rice seems dry, a tablespoon or two of water or broth works wonders.

Frequently Asked Questions

Can I use chicken thighs instead of breasts?

Absolutely! Boneless, skinless thighs work beautifully and stay super juicy. Bone-in pieces need longer cooking time, so adjust accordingly.

What if I don't have Italian seasoning?

Make your own blend with equal parts dried basil, oregano, thyme, and a pinch of rosemary. Or just use whatever dried herbs you have on hand lemon pepper chicken vibes work great too.

The lemon brings that little zip of freshness, the herbs make everything smell amazing, and that butter-browned chicken? Chef's kiss. Plus, knowing there's only one pan to deal with afterward makes the whole experience even sweeter.

So grab your skillet and give this easy lemon chicken and rice a try. It might just become your new weeknight hero too.
