The Best vegan mac and cheese recipe you’ll ever try! It’s just as tasty as the real thing, with a creamy, cheesy sauce created from sweet potatoes and nutritional yeast.

When I need comfort food, the first thing I cook is this vegan mac and cheese. It only requires a few ingredients that I nearly always have on hand, is quick and easy to prepare, and tastes fantastic. The creamy sauce is rich, delicious, and bursting with the flavor of nutty, tangy cheddar cheese.
In the past, I’ve prepared dairy-free mac & cheese with coconut milk, cauliflower, and a hefty handful of cashews., but this recipe is by far my favorite. The incredibly creamy sauce still has a small number of cashews in it, but the base is yellow and sweet potato mashed together.
The sweet potato gives it a vivid orange color and the yellow potato gives it a lovely mushy texture. Its cheesy flavor is enhanced by apple cider vinegar, garlic, onion powder, and nutritional yeast. It’s entertaining, delicious, and even nutritious! I believe you will enjoy it.

Make the vegan cheese sauce first. Cook sweet potatoes and potatoes together until they are soft. After that, drain them and combine them with raw cashews, nutritional yeast, garlic, onion powder, apple cider vinegar, sea salt, water, and olive oil in a blender. Puree until completely smooth.
Cook the pasta next. Cook the pasta until it is al dente in a large pot of salted water. Cook it until it’s al dente, as directed on the package. Set aside 1/2 cup of the starchy pasta water before draining the pasta.

Finally, combine everything! Add the cashew cheese to the cooked macaroni in the pot. To lighten the sauce, add a little of the reserved pasta water at a time. To taste, season with salt and pepper.
