You know that feeling when you carve a pumpkin and wonder what to do with all those seeds? I used to toss them straight into the trash until my mom called me out one year. "Barbara," she said, "you're throwing away the best part!" She was right. Air fryer pumpkin seeds have become my fall obsession, and honestly, they're so much easier than the oven method.

Let me tell you once you try making pumpkin seeds in the air fryer, you'll never go back to the oven. They come out perfectly crispy in half the time, with way less fuss. No preheating. No waiting around. Just quick, crunchy perfection. Plus, you can season them five different ways (I'm sharing all my favorites below), so whether you're craving something spicy, sweet, or savory, there's a flavor for you.

These little gems are also ridiculously nutritious. Packed with protein, healthy fats, and minerals like magnesium and zinc, air fryer pumpkin seeds make a guilt-free snack that actually keeps you satisfied. What You'll Need

Here's what you need to get started:

For the base:

  • 1 cup pumpkin seeds in shell
  • ½ teaspoon olive oil

Seasoning options:

Buffalo Pumpkin Seeds:

  • 2 tablespoons buffalo sauce
  • ¼ teaspoon pepper

Ranch Pumpkin Seeds:

  • 2 tablespoons dry ranch seasoning
  • ¼ teaspoon pepper

BBQ Pumpkin Seeds:

  • 2 tablespoons barbecue sauce
  • ¼ teaspoon pepper
  • ¼ teaspoon salt

Air Fryer Pumpkin Seeds Cinnamon (my personal favorite):

  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Salt and Pepper Pumpkin Seeds:

  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground pepper

How to Make Air Fryer Pumpkin Seeds

Step 1: Clean Your Seeds

Cut open your pumpkin and scoop everything into a large bowl. Fill the bowl with water the seeds will float right to the top while the stringy stuff sinks. Use a slotted spoon to transfer the seeds to a colander, then rinse them well under cold water to get rid of any remaining pumpkin bits.

If you want to go the extra mile for easier digestion, you can boil or soak the seeds. To boil, bring 4 cups of water and 4 tablespoons of salt to a boil, add the seeds, and cook for about 10 minutes. To soak, mix 1 tablespoon of salt into a quart of water, add the seeds, and let them sit for at least 8 hours or overnight at room temp. Either way, make sure to dry them well afterward.

Step 2: Dry the Seeds

Lay the seeds out on a clean, lint-free tea towel and let them air dry, or pat them dry with another towel. This step matters wet seeds won't get crispy.

Step 3: Season the Seeds

Put your dried seeds in a medium bowl. Drizzle with the olive oil and toss to coat. Then add your seasonings of choice and mix everything together really well. Don't be shy here make sure every seed gets some love.

Step 4: Air Fry

Place the seasoned seeds in your air fryer basket in a single layer. Set the temperature to 360°F and roast for 10 minutes, shaking the basket or flipping the seeds around halfway through. They should come out golden and crispy.

Let them cool for a few minutes before digging in they get crunchier as they cool.

Air Fryer Pumpkin Seeds Time and Temp

The magic numbers? 360°F for 10 minutes. This is the sweet spot for perfectly crispy seeds without burning. Just remember to shake the basket halfway through so they cook evenly.

Pumpkin Seeds Air Fryer vs Oven

I've tried both, and here's the honest truth: the air fryer wins every time. The oven takes about 20-30 minutes at 300°F, plus you have to preheat it. With the air fryer, you're done in 10 minutes flat with no preheating needed. The texture is also better crunchier and more evenly roasted. If you're still using the oven, I get it. But trust me, give the air fryer a shot.

Can You Roast Shelled Pumpkin Seeds in Air Fryer?

Absolutely! If you're using pre-shelled pumpkin seeds (also called pepitas), the process is pretty much the same. Just reduce the cooking time to about 5-7 minutes since they're smaller and cook faster. Keep a close eye on them so they don't burn.

Tips for the Best Pumpkin Seeds

  • Dry them thoroughly. Moisture is the enemy of crispiness.
  • Don't overcrowd the basket. Give the seeds room to breathe. Cook in batches if needed.
  • Experiment with seasonings. The honey roasted pumpkin seeds air fryer version is incredible just toss with a tablespoon of honey and a pinch of cinnamon after cooking.
  • Store them right. Keep your cooled seeds in an airtight container at room temperature for up to a week, or freeze them for longer storage.

What to Do with Your Pumpkin Seeds

These crunchy little guys are so versatile. Toss them on salads, sprinkle them over healthy spring dinner ideas, or mix them into energy boosting breakfast smoothies. They're also perfect for adding crunch to easy pasta salad recipe or as a topping for creamy zucchini soup recipe.

I love keeping a jar on the counter for snacking, especially when I'm craving something savory mid-afternoon. The air fryer pumpkin seeds seasoning recipe options mean you'll never get bored.

Why Are My Pumpkin Seeds Chewy?

If your seeds come out chewy instead of crunchy, they probably weren't dry enough before cooking. Make sure to pat them really dry after rinsing, or let them air dry for at least 30 minutes. Also, don't skip shaking the basket halfway through cooking it helps them crisp up evenly.

Frequently Asked Questions

How long should I soak pumpkin seeds before air frying?

At least 8 hours or overnight. This makes them easier to digest and can improve the texture.

Can I make air fryer pumpkin seeds without oil?

You can, but the oil helps the seasonings stick and improves crispiness. If you want to skip it, try using a light spray of cooking spray instead.

Storage Tips

Store your cooled air fryer pumpkin seeds in an airtight container at room temperature for up to a week. They can also be frozen for up to three months just make sure they're completely cool before freezing. When you're ready to eat them, let them come to room temperature or warm them briefly in the air fryer to restore crispiness.

So next time you carve a pumpkin, don't let those seeds go to waste. Whether you're making the spicy buffalo version or going sweet with air fryer pumpkin seeds cinnamon, you're in for a treat. It's one of those simple pleasures that makes fall feel just a little more special.
